<p>I love quiche!  It&#8217;s often my go-to meal when I can&#8217;t think of anything else for dinner.  It&#8217;s perfect for Meatless Mondays too.</p>
<p>Recently my husband has been spending a lot of time getting our garden ready for the summer.  Lately we&#8217;ve been enjoying some swiss chard, and I found this great recipe over at <a href="http://www.stonyfield.com/" target="_blank">Stonyfield.com</a>.  I love that it uses yogurt instead of heavy cream.  Serve it with a nice salad, and voila!  You&#8217;ve got a complete meal.</p>
<p><strong>Fresh Swiss Chard Quiche<br />
</strong>(<a href="http://www.stonyfield.com/recipes/fresh-swiss-chard-quiche" target="_blank"><em>Stonyfield Farm</em></a>)</p>
<p>Ingredients:</p>
<p>6 eggs<br />
2/3 cup plain lowfat yogurt<br />
1/3 cup whole milk<br />
4 oz. swiss cheese, shredded<br />
3/4 tsp salt<br />
1/4 tsp pepper<br />
1 Tbsp olive oil<br />
1 bunch Swiss chard (stems removed and leaves chopped)<br />
1 onion, diced<br />
1 9-inch piecrust (see my recipe <a href="http://munchomom.com/2012/03/23/classic-apple-pie/" target="_blank">here</a>)</p>
<p><a href="http://munchomom.files.wordpress.com/2013/05/img_4275.jpg"><img class="alignnone size-large wp-image-5053" alt="IMG_4275" src="http://munchomom.files.wordpress.com/2013/05/img_4275.jpg?w=640&#038;h=853" width="640" height="853" /></a></p>
<p>Preheat oven to 375 degrees.  Place pie crust into a 9-inch pie plate, crimping the edges.</p>
<p>Whisk together the eggs, yogurt, milk, cheese and 1/2 teaspoon salt and the pepper, and set aside.</p>
<p>Heat oil in a large nonstick skillet over medium-high heat.  Cook onion for 8 minutes.  Add chard leaves to skillet and sprinkle with remaining 1/4 teaspoon of salt.  Cook until wilted, stirring often, about 3 minutes.  Stir chard into egg mixture and pour into crust.</p>
<p>Bake at 375 degrees for 15 minutes, then reduce oven temperature to 325 and bake another 30 minutes or until browned.  Let stand 5 minutes before serving.</p>

<p>It&#8217;s hard to believe my son will turn ten years old this fall and my daughter will be six.  Whoa!  Have I really been a mom for that long? Where did the time go?</p>
<p>You would think that with ten years of experience, I could offer profound wisdom on this mothering thing.  But the truth is, I&#8217;m still learning.  Every day is a new adventure in the journey.  And just as soon as I think I&#8217;ve got it all figured out, I find out I really don&#8217;t.</p>

<p>I do know this: I am beyond thankful for my two beautiful children.  I am thankful they are both healthy.  I am thankful for the many ways they brighten my day.  I am thankful for how they have given my life new meaning.</p>

<p>My daughter, who is six, can bring me joy in the smallest things.  Her smile lights up any dreary day and causes me to pause as I remember my own dad singing to me as a little girl, &#8220;<em>you are my sunshine, my only sunshine&#8230;</em>&#8221;  She is a nonstop bundle of energy, always in motion, never stopping. Happy, glimmering, and sparkling, she is my sunshine.</p>

<p>My son, fast approaching ten, shows me how to slow down and savor life.  He stops and takes notice of nature&#8217;s wonders, begging me to see the spectacular iris blooming in our yard or calling me to come and look at the four-leaf clover he just found.  He is attentive to detail, sensitive, compassionate, and kind.</p>

<p>Some days I long for those sweet moments when I held their tiny little bodies as they slept, unaware of the world around them.  Those are the days I realize just how fleeting life is, and I want to hold on and make time stand still.</p>

<p>I may not be the perfect mom.  I may lose my patience.  I may get caught up in my own busyness and not be still enough, or stop long enough to really notice the small grown-ups they are slowly becoming. With each passing day, it is one step closer to the moment that they will be ready to fly away on their own.</p>

I know I&#8217;m not the perfect mom.  I don&#8217;t strive to be.  I only strive to love my children unconditionally. And I hope that when they are fully grown, they can look back and say just one thing &#8211; that they always knew how much I loved them.</p>

3 sticks unsalted butter, room temperature, plus more for pans<br />
1 cup unsweetened cocoa powder, plus more for pans<br />
1 cup boiling water<br />
1 cup sour cream<br />
3 cups all-purpose flour<br />
3/4 teaspoon salt<br />
1 teaspoon baking powder<br />
1 teaspoon baking soda<br />
3 3/4 cups sugar, divided<br />
4 large eggs, plus 5 large egg whites, room temperature, divided<br />
5 teaspoons pure vanilla extract, divided<br />
1 tablespoon corn syrup</p>

<p>Preheat oven to 350 degrees.  Butter two 8-inch round cake pans and line with parchment; butter parchment and dust pans with cocoa.  Whisk boiling water into cocoa until smooth; whisk in sour cream.  Whisk together flour, salt, baking powder, and baking soda.  In a large bowl, using a mixer, beat butter and 2 1/4 cups sugar on medium-high until fluffy and pale yellow.  Beat in whole eggs, one at a time, until incorporated.  With mixer on low, add flour mixture in 3 additions, alternating with 2 additions cocoa mixture, and beat until combined.  Fold in 4 teaspoons vanilla.</p>

<p>Divide batter among pans.  Bake until a toothpick inserted in center comes out clean, 45-50 minutes, rotating pans halfway through.  Transfer pans to wire racks and let cool completely.  Remove cakes from pans and discard parchment.  Trim cakes if desired.</p>

<p>In a heatproof bowl set over (not in) a pan of simmering water, whisk together remaining 1 1/2 cups sugar, egg whites, and corn syrup until sugar is dissolved.  Remove from heat; using mixer, beat on high until stiff, fluffy peaks form, about 5 minutes.  Fold in remaining 1 teaspoon vanilla.  Transfer a cake layer to a serving plate and top with 1 cup frosting.  Stack second cake on top and cover top and sides with remaining frosting.</p>

<p>In a heatproof bowl set over (not in) a pan of simmering water, whisk together remaining 1 1/2 cups sugar, egg whites, and corn syrup until sugar is dissolved.  Remove from heat; using mixer, beat on high until stiff, fluffy peaks form, about 5 minutes.  Fold in remaining 1 teaspoon vanilla.  Transfer a cake layer to a serving plate and top with 1 cup frosting.  Stack second cake on top and cover top and sides with remaining frosting.</p>

</a>Sunday nights are always taco night at our house.  And I do mean <em>always</em>.   The thing I love about tacos is they are so simple to make.  It&#8217;s an easy, no-fuss meal that everyone loves.  With Cinco de Mayo coming up, I want to share this recipe with you.  It&#8217;s a light, refreshing side dish that you&#8217;re sure to enjoy!</p>
<p><strong>Easy Mango Salsa</strong><br />
<em>Taste of Home<br />
</em>1/2 cup chopped tart apple<br />
1/2 cup chopped peeled mango<br />
1/2 cup pineapple<br />
2 green onions, thinly sliced<br />
2 tablespoons minced fresh cilantro<br />
3 to 5 drops hot pepper sauce, optional</p>
<p>In a small bowl, combine the apple, mango, pineapple, onions, cilantro and pepper sauce if desired.  Chill until serving.  Serve with tortilla chips.</p>
<p>Nutrition Information (1/2 cup serving): 62 calories, 3 mg sodium, 16 g carbohydrates, 2 g fiber, 1 g protein</p>

<p>Doughnuts.  I know, they get a bad rap.  As they should, really.  But who doesn&#8217;t love a good doughnut?</p>
<p>When my children were younger, we lived about 5 minutes from a Krispy Kreme doughnut shop. Although we passed it nearly every day, we seldom stopped.  The health nut in me kept us far away, so trips to Krispy Kreme were only for special occasions such as celebrating the last day of school. When we did go, those visits were pure joy for my children.  After all, it&#8217;s hard to beat a fresh doughnut.  Even now, when we go back to my hometown every summer, our trip is not complete without a stop at Krispy Kreme.  It&#8217;s funny how in that single moment sitting at a table inside Krispy Kreme, time stood still and all of our worries were forgotten.  My two children, wearing silly little paper Krispy Kreme hats, in complete and utter bliss &#8211; covered from head to toe in sticky sweetness.</p>

<p>I recently found a recipe I love for homemade doughnuts.  It comes from <a href="http://www.bunsinmyoven.com" target="_blank">Buns in My Oven</a>.  If you&#8217;re looking to make doughnuts from scratch, trust me, this is the best website.  From traditional glazed blueberry doughnuts to white chocolate mocha (!!!) doughnuts, the options are endless.  The pictures alone will make you want to rush into your kitchen and whip up <span style="font-size:13px;line-height:19px;">a batch!</span></p>

<p>For my first attempt, I went with a simple recipe for Vanilla Glazed Vanilla Doughnuts (recipe <a href="http://www.bunsinmyoven.com/2012/06/25/vanilla-glazed-vanilla-donuts/" target="_blank">here</a>).  I especially like that the doughnuts are baked and not fried.  You&#8217;ll need a couple of doughnut pans (thanks, Mom!).  The batter is a cinch to put together.  Be sure to get your children in on the action &#8211; they&#8217;ll love dipping the doughnuts in the glaze and topping each one with colorful sprinkles!</p>

<p>I&#8217;m always on the hunt for a good granola bar recipe!  When I saw this one in my new Smitten Kitchen cookbook, I knew I had to try it.  With  just the right amount of sweetness, they are chock-full of healthy ingredients.  Delicious, hearty and wholesome!</p>
<p><strong>Almond Date Breakfast Bars</strong><br />
<em>(The Smitten Kitchen Cookbook by Deb Perelman)<br />
</em></p>
<p>1 cup chopped dried pitted dates<br />
1 1/4 cups quick rolled oats<br />
3 tablespoons whole wheat flour<br />
1/3 cup wheat germ<br />
1/2 cup thinly sliced almonds<br />
1/2 teaspoon salt<br />
1/4 teaspoon cinnamon<br />
1/4 cup almond butter<br />
1/4 cup olive oil<br />
1/4 cup honey<br />
1/4 teaspoon freshly grated orange zest<br />
1/4 teaspoon almond extract</p>
<p>Preheat oven to 350 degrees.  Line an 8x8x2-inch pan with parchment paper, then line again in the opposite direction to create a parchment &#8220;sling&#8221; which will make it easier to remove the bars from the pan.</p>
<p>Stir together the dates, oats, flour, wheat germ, almonds, salt, and cinnamon in the bottom of a large bowl.  In a separate bowl, whisk together the almond butter, olive oil, honey, orange zest, and almond extract until smooth.  Pour the wet ingredients over the dry ingredients and stir until well combined and the dry ingredients are evenly coated.  Spread the batter into the prepared pan, pressing firmly into the bottom and sides of the pan.</p>
<p>Bake the bars for 20 to 25 minutes, until they are brown around the edges.  Cool in the pan on a rack, then after 20 minutes remove the bars using the parchment &#8220;sling.&#8221;  Once they are cool, use a serrated knife to cut the bars into squares.</p>

<p>I know, I know.  <em>Chocolate Velvet Beet C</em><em>upcakes?  </em>Yep, you read that right!  These cupcakes do indeed contain beet puree.  And chocolate.  And they are really, really good!!!</p>

<p>Roast beets to eat?  Check.  Juice beets to drink?  Check.  But actually pureeing them to use instead of red food coloring in cupcakes was a challenge I had never tackled before.  To be honest, it was a little intimidating.</p>

<p>The end result was SUCCESS!!!  These cupcakes are moist and delicious.  And all of us parents can rest easy knowing our children won&#8217;t be bouncing off the walls after inhaling them. Maybe.</p>

<p>Happy Mardi Gras to all of you!  I am sad to say that I have not had the time to bake up any type of Mardi Gras culinary confection this year, so I am sharing these nifty links with you today!</p>

<p>First, check out my first ever <a href="http://munchomom.com/2012/02/21/traditional-king-cake-for-mardi-gras/" target="_blank">Mardi Gras King Cake!</a>  Just thinking about how good that cake was is making me drool!</p>

<p>I made some <a href="http://munchomom.com/2012/02/20/new-orleans-beignets/" target="_blank">New Orleans Beignets</a> last year too.  They were a BIG hit with my kids!  Total melt-in-your-mouth goodness.</p>
<p>I also want to share this lovely post from <a href="www.bakedbree.com" target="_blank">Baked Bree</a> with you.  <a href="http://bakedbree.com/king-cake-cookies-with-praline-pecan" target="_blank">King Cake cookies!!!</a>  If I had the time, I would be making these for sure.</p>
<p>And aren&#8217;t these <a href="http://www.foodista.com/recipe/T6ZPS33R/mardi-gras-cupcakes#s.abtsgyeuyayaa" target="_blank">Mardi Gras cupcakes</a> beautiful?</p>
<p>Now, on to the pancakes!  The tradition of eating pancakes on Shrove Tuesday came about as a way to use up as much milk, eggs, and fat as possible before Ash Wednesday began.  It was the last day for celebration and feasting before the period of fasting required during the Lenten season.  I love having pancakes for dinner on Shrove Tuesday.  It&#8217;s so fun and easy!</p>
<p>In need of a good pancake recipe?</p>
<p>How about the <a href="http://munchomom.com/2012/01/18/the-fluffiest-pancakes-you-will-ever-eat/" target="_blank">fluffiest pancakes</a> you will ever eat?  They are out of this world!</p>
<p><span style="font-size:13px;line-height:19px;">These </span><a style="font-size:13px;line-height:19px;" href="http://munchomom.com/2012/02/16/banana-pancakes/" target="_blank">banana pancakes</a><span style="font-size:13px;line-height:19px;"> are tasty, especially if you have a hankering for bananas.</span></p>
<p>And, my personal favorite &#8211; <a href="http://munchomom.com/2011/12/28/pumpkin-pancakes-part-two/" target="_blank">pumpkin pancakes</a> - which are especially good if your husband makes them for you on your birthday!  Just sayin&#8217;.</p>

<p>And, up there with pumpkin pancakes in my book are these <a href="http://rufusguide.wordpress.com/2013/02/11/sweet-potato-flap-jacks/" target="_blank">sweet potato flapjacks</a>!  I have some leftover sweet potatoes in the fridge as we speak&#8230;</p>
<p>So, however you choose to celebrate Mardi Gras, I hope it is a marvelous one!  I can&#8217;t wait to dig into some pancakes!</p>
