Fresh Swiss Chard Quiche

IMG_4258

I love quiche!  It’s often my go-to meal when I can’t think of anything else for dinner.  It’s perfect for Meatless Mondays too.

Recently my husband has been spending a lot of time getting our garden ready for the summer.  Lately we’ve been enjoying some swiss chard, and I found this great recipe over at Stonyfield.com.  I love that it uses yogurt instead of heavy cream.  Serve it with a nice salad, and voila!  You’ve got a complete meal.

Fresh Swiss Chard Quiche
(Stonyfield Farm)

Ingredients:

6 eggs
2/3 cup plain lowfat yogurt
1/3 cup whole milk
4 oz. swiss cheese, shredded
3/4 tsp salt
1/4 tsp pepper
1 Tbsp olive oil
1 bunch Swiss chard (stems removed and leaves chopped)
1 onion, diced
1 9-inch piecrust (see my recipe here)

IMG_4275

Preheat oven to 375 degrees.  Place pie crust into a 9-inch pie plate, crimping the edges.

Whisk together the eggs, yogurt, milk, cheese and 1/2 teaspoon salt and the pepper, and set aside.

Heat oil in a large nonstick skillet over medium-high heat.  Cook onion for 8 minutes.  Add chard leaves to skillet and sprinkle with remaining 1/4 teaspoon of salt.  Cook until wilted, stirring often, about 3 minutes.  Stir chard into egg mixture and pour into crust.

Bake at 375 degrees for 15 minutes, then reduce oven temperature to 325 and bake another 30 minutes or until browned.  Let stand 5 minutes before serving.

Devil’s Food Cake with Fluffy Frosting

IMG_4093

My husband asked me the other day what I wanted for Mother’s Day.  As in, to eat.  All I could think of was one thing: chocolate.  So, I made this cake!

Devil’s Food Cake with Fluffy Frosting
Everyday Food, June 2012

IMG_4072

Ingredients:
3 sticks unsalted butter, room temperature, plus more for pans
1 cup unsweetened cocoa powder, plus more for pans
1 cup boiling water
1 cup sour cream
3 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
3 3/4 cups sugar, divided
4 large eggs, plus 5 large egg whites, room temperature, divided
5 teaspoons pure vanilla extract, divided
1 tablespoon corn syrup

IMG_4063

Preheat oven to 350 degrees.  Butter two 8-inch round cake pans and line with parchment; butter parchment and dust pans with cocoa.  Whisk boiling water into cocoa until smooth; whisk in sour cream.  Whisk together flour, salt, baking powder, and baking soda.  In a large bowl, using a mixer, beat butter and 2 1/4 cups sugar on medium-high until fluffy and pale yellow.  Beat in whole eggs, one at a time, until incorporated.  With mixer on low, add flour mixture in 3 additions, alternating with 2 additions cocoa mixture, and beat until combined.  Fold in 4 teaspoons vanilla.

IMG_4111

Divide batter among pans.  Bake until a toothpick inserted in center comes out clean, 45-50 minutes, rotating pans halfway through.  Transfer pans to wire racks and let cool completely.  Remove cakes from pans and discard parchment.  Trim cakes if desired.

IMG_4094

In a heatproof bowl set over (not in) a pan of simmering water, whisk together remaining 1 1/2 cups sugar, egg whites, and corn syrup until sugar is dissolved.  Remove from heat; using mixer, beat on high until stiff, fluffy peaks form, about 5 minutes.  Fold in remaining 1 teaspoon vanilla.  Transfer a cake layer to a serving plate and top with 1 cup frosting.  Stack second cake on top and cover top and sides with remaining frosting.

Homemade Vanilla Doughnuts

IMG_2675

Doughnuts.  I know, they get a bad rap.  As they should, really.  But who doesn’t love a good doughnut?

When my children were younger, we lived about 5 minutes from a Krispy Kreme doughnut shop. Although we passed it nearly every day, we seldom stopped.  The health nut in me kept us far away, so trips to Krispy Kreme were only for special occasions such as celebrating the last day of school. When we did go, those visits were pure joy for my children.  After all, it’s hard to beat a fresh doughnut.  Even now, when we go back to my hometown every summer, our trip is not complete without a stop at Krispy Kreme.  It’s funny how in that single moment sitting at a table inside Krispy Kreme, time stood still and all of our worries were forgotten.  My two children, wearing silly little paper Krispy Kreme hats, in complete and utter bliss – covered from head to toe in sticky sweetness.

IMG_2678

I recently found a recipe I love for homemade doughnuts.  It comes from Buns in My Oven.  If you’re looking to make doughnuts from scratch, trust me, this is the best website.  From traditional glazed blueberry doughnuts to white chocolate mocha (!!!) doughnuts, the options are endless.  The pictures alone will make you want to rush into your kitchen and whip up a batch!

IMG_2676

For my first attempt, I went with a simple recipe for Vanilla Glazed Vanilla Doughnuts (recipe here).  I especially like that the doughnuts are baked and not fried.  You’ll need a couple of doughnut pans (thanks, Mom!).  The batter is a cinch to put together.  Be sure to get your children in on the action – they’ll love dipping the doughnuts in the glaze and topping each one with colorful sprinkles!

Almond Date Breakfast Bars from the Smitten Kitchen

IMG_3251

I’m always on the hunt for a good granola bar recipe!  When I saw this one in my new Smitten Kitchen cookbook, I knew I had to try it.  With  just the right amount of sweetness, they are chock-full of healthy ingredients.  Delicious, hearty and wholesome!

Almond Date Breakfast Bars
(The Smitten Kitchen Cookbook by Deb Perelman)

1 cup chopped dried pitted dates
1 1/4 cups quick rolled oats
3 tablespoons whole wheat flour
1/3 cup wheat germ
1/2 cup thinly sliced almonds
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup almond butter
1/4 cup olive oil
1/4 cup honey
1/4 teaspoon freshly grated orange zest
1/4 teaspoon almond extract

Preheat oven to 350 degrees.  Line an 8x8x2-inch pan with parchment paper, then line again in the opposite direction to create a parchment “sling” which will make it easier to remove the bars from the pan.

Stir together the dates, oats, flour, wheat germ, almonds, salt, and cinnamon in the bottom of a large bowl.  In a separate bowl, whisk together the almond butter, olive oil, honey, orange zest, and almond extract until smooth.  Pour the wet ingredients over the dry ingredients and stir until well combined and the dry ingredients are evenly coated.  Spread the batter into the prepared pan, pressing firmly into the bottom and sides of the pan.

Bake the bars for 20 to 25 minutes, until they are brown around the edges.  Cool in the pan on a rack, then after 20 minutes remove the bars using the parchment “sling.”  Once they are cool, use a serrated knife to cut the bars into squares.

Chocolate Velvet Beet Cupcakes from Weelicious

photo (6)

I know, I know.  Chocolate Velvet Beet Cupcakes?  Yep, you read that right!  These cupcakes do indeed contain beet puree.  And chocolate.  And they are really, really good!!!

photo (2)

Roast beets to eat?  Check.  Juice beets to drink?  Check.  But actually pureeing them to use instead of red food coloring in cupcakes was a challenge I had never tackled before.  To be honest, it was a little intimidating.

photo (3)

The end result was SUCCESS!!!  These cupcakes are moist and delicious.  And all of us parents can rest easy knowing our children won’t be bouncing off the walls after inhaling them. Maybe.

Time to Celebrate Mardi Gras! Pancakes, anyone?

*Note: if you participated in my recent giveaway, please see the bottom of this post!*

Happy Mardi Gras to all of you!  I am sad to say that I have not had the time to bake up any type of Mardi Gras culinary confection this year, so I am sharing these nifty links with you today!

IMAG4965

First, check out my first ever Mardi Gras King Cake!  Just thinking about how good that cake was is making me drool!

IMAG4872

I made some New Orleans Beignets last year too.  They were a BIG hit with my kids!  Total melt-in-your-mouth goodness.

I also want to share this lovely post from Baked Bree with you.  King Cake cookies!!!  If I had the time, I would be making these for sure.

And aren’t these Mardi Gras cupcakes beautiful?

Now, on to the pancakes!  The tradition of eating pancakes on Shrove Tuesday came about as a way to use up as much milk, eggs, and fat as possible before Ash Wednesday began.  It was the last day for celebration and feasting before the period of fasting required during the Lenten season.  I love having pancakes for dinner on Shrove Tuesday.  It’s so fun and easy!

In need of a good pancake recipe?

How about the fluffiest pancakes you will ever eat?  They are out of this world!

These banana pancakes are tasty, especially if you have a hankering for bananas.

And, my personal favorite – pumpkin pancakes - which are especially good if your husband makes them for you on your birthday!  Just sayin’.

If you’re still in a pancake conundrum, Things We Make has you covered with this marvelous post: Pancakes? We’ve got ‘em. I don’t know about you, but those caramel apple cloud pancakes look divine!

And, up there with pumpkin pancakes in my book are these sweet potato flapjacks!  I have some leftover sweet potatoes in the fridge as we speak…

So, however you choose to celebrate Mardi Gras, I hope it is a marvelous one!  I can’t wait to dig into some pancakes!

Until next time,
Muncho Mom

The Church Planting Wife: Help and Hope for Her Heart

revised moody cover.jpg
Thirteen years ago, when my husband felt called to go into pastoral ministry, we took the plunge.  We found ourselves at Candler School of Theology on the campus of Emory University in Atlanta, GA.  Married two years and with no children, thus began one of the best adventures of our married life.  I worked during the day while my husband attended classes to earn his Masters in Divinity degree.  I baked at night while he read pages and pages and pages of religious textbooks.  I perfected cinnamon rolls and learned the art of baking a true French baguette.  We lived in a tiny little apartment with the smallest kitchen you have ever seen, but boy was it fun.  Our time at Candler was truly blessed and we came away with friendships to last a lifetime.
Now, even after 10 years in the ministry, I find it hard to put my thoughts into words.  When we were just starting out, I voiced my trepidation with friends who all responded, “Oh, you will be the best pastor’s wife!”  They were quite certain of that – more than I was.  I was thankful for their confidence in me but still wondered if I could really live up to the picture-perfect image of being a “pastor’s wife.”  I could play the piano, yes, but was that the only pre-requisite?  Looking back, I’m thankful our first appointment was at a large church where there were really no expectations placed on me at all!  I needed those first few years to figure out where my gifts were and what I felt called to do.  Our first church was a tremendous blessing, in so many ways.
These days, I feel more seasoned.  I know where my gifts lie.  I know when to say yes and when to say no.  I still probably too often say yes when I shouldn’t, and more often feel pulled between being a good mother to my children and over-committing myself to the ministries of our church.  Why do I do that?  I think many pastors’ wives have the mentality that we have to DO something or even MANY things just because of our role.   It’s easy to take on more than we can handle.  Instead, I’ve learned that it’s best to just focus on where I feel called.  God didn’t call me to be busy.  God called me to be a blessing.  I hope that in some small way I can do just that.
Although pastoral ministry certainly has its fair share of sacrifices, the rewards are immeasurable.  We are strengthened and supported by our church family in so many ways.  We’ve been humbled and overwhelmed.  And more often than not, we are recipients of God’s grace.I recently signed on to be part of the launch team for a new book titled The Church Planting Wife: Help and Hope for Her Heart by Christine Hoover.  The wife of a church planting pastor and mom to three boys, Christine has 12 years of ministry and counseling experience and is passionate about helping other ministry wives flourish in their roles.  Her popular blog, www.GraceCoversMe.com, encourages women to live and lead from grace.
This book was so very timely for me.  It absolutely resonated with every aspect of my life!  Christine’s writing is open and honest.  If you are a pastor’s wife and especially if you are a church planting wife, I hope you will seek out this valuable resource and read it for yourself (go here for my giveaway!).  I came away feeling uplifted, encouraged, and deeply blessed.
I’m linking up with Christine over at Grace Covers Me today as she releases her book, The Church Planting Wife: Help and Hope for Her Heart, and collects heart stories from church planting and ministry wives. Join us?
Until next time,
