I know, I know.  Chocolate Velvet Beet Cupcakes?  Yep, you read that right!  These cupcakes do indeed contain beet puree.  And chocolate.  And they are really, really good!!!

Roast beets to eat?  Check.  Juice beets to drink?  Check.  But actually pureeing them to use instead of red food coloring in cupcakes was a challenge I had never tackled before.  To be honest, it was a little intimidating.

The end result was SUCCESS!!!  These cupcakes are moist and delicious.  And all of us parents can rest easy knowing our children won’t be bouncing off the walls after inhaling them. Maybe.
