Time to Celebrate Mardi Gras! Pancakes, anyone?

Happy Mardi Gras to all of you!  I am sad to say that I have not had the time to bake up any type of Mardi Gras culinary confection this year, so I am sharing these nifty links with you today!

First, check out my first ever Mardi Gras King Cake!  Just thinking about how good that cake was is making me drool!

I made some New Orleans Beignets last year too.  They were a BIG hit with my kids!  Total melt-in-your-mouth goodness.

I also want to share this lovely post from Baked Bree with you.  King Cake cookies!!!  If I had the time, I would be making these for sure.

And aren’t these Mardi Gras cupcakes beautiful?

Now, on to the pancakes!  The tradition of eating pancakes on Shrove Tuesday came about as a way to use up as much milk, eggs, and fat as possible before Ash Wednesday began.  It was the last day for celebration and feasting before the period of fasting required during the Lenten season.  I love having pancakes for dinner on Shrove Tuesday.  It’s so fun and easy!

How about the fluffiest pancakes you will ever eat?  They are out of this world!

These banana pancakes are tasty, especially if you have a hankering for bananas.

And, my personal favorite – pumpkin pancakes - which are especially good if your husband makes them for you on your birthday!  Just sayin’.

And, up there with pumpkin pancakes in my book are these sweet potato flapjacks!  I have some leftover sweet potatoes in the fridge as we speak…

So, however you choose to celebrate Mardi Gras, I hope it is a marvelous one!  I can’t wait to dig into some pancakes!
