Grilled Fresh Veggie Pizza

Grill a pizza!!!  Trust me…it’s AMAZING.  You can thank me later.

Ingredients:
pizza crust (we used a storebought whole wheat pizza crust)
tomato sauce of your choice
1 red bell pepper, sliced
1 orange bell pepper, sliced
4 plum tomatoes, sliced
1 clove garlic, minced
1 cup sliced mushrooms
1 small red onion, sliced
1 cup feta cheese
1 cup shredded mozzarella cheese
1 tablespoon olive oil
spinach or arugula
fresh herbs (we used basil, thyme, and oregano)

First, fire up your grill.  My husband is a great griller.  Actually, he made the whole pizza…I just brought home the ingredients from the store.  Thanks honey!

Lay sliced tomatoes on a baking sheet.  Mix olive oil with minced garlic and drizzle over tomatoes; set aside.  Toss the pizza crust on the grill for just a minute or two.  Remove from grill and add toppings.  Return pizza to grill; cover and continue to grill until pizza is brown on the bottom, 3 to 4 minutes longer.  Transfer to a cutting board, cut into pieces and serve.

Perfectly crispy crust and an insanely flavorful pizza – it doesn’t get much better than that!
